A milky and buttery taste with notes of tropical fruit and green peppers which is derived from the natural, red smear on the rind and the albino blue mould inside. As Marquis matures, the taste and flavour of the read smear become slightly sharper, while the cheese itself gets more character. Castello Marquis is a truly special cheese. Its taste and flavour are intense and piquant. Thanks to the unique production method, the mould culture develops from the inside of the cheese, whereas the red smear does so from the outside. Its consistency is creamy.

My favourite Castello is the Truffle one, followed closely by the creamy blue, but I have to say this one is a close 3rd (just don’t sniff it first, tastes way better than it smells haha).
Since I tried Castello double cream brie, I am the biggest fan of Castello!!!! Since then, I now I try all the different cheese they have and I loved the Marquis too! I am french so trust me when I say I miss my cheese but I am so happy with Castello as they do cheese that have FLAVORS! Like it is not boring, they are delicious! I would have never tried the Marquis before as I thought it wouldn’t taste much but since I know their double cream brie taste like a french brie (and oh god the truffle one is amazing too!) I decided to give them all a try and I don’t regret it for a minute. I highly recommend you this cheese for a little change, I like it on bread 🙂

Awesome cheese Castello is a cheese like no other. I tried this at work one of my collegues had it, I love cheese and crackers so was so tempted to try it. I don’t know how they got all those flavous in a small cheese but they need to be congradulated.
