A milky and buttery taste with notes of tropical fruit and green peppers which is derived from the natural, red smear on the rind and the albino blue mould inside. As Marquis matures, the taste and flavour of the read smear become slightly sharper, while the cheese itself gets more character. Castello Marquis is a truly special cheese. Its taste and flavour are intense and piquant. Thanks to the unique production method, the mould culture develops from the inside of the cheese, whereas the red smear does so from the outside. Its consistency is creamy.
Beautiful buttery cheese perfect for a cheese board

It’s punchy and creamy. Lovely with a bit of fruit (I had dried figs) and wafer crackers. Reminds me a little bit if the unpasteurised cheese we ate in the south if France.

Subtle creamy, blue flavours. Melts in your mouth.
This cheese is beautifully creamy and leaves a delicious taste on the pallet. I tried it as a topping on fillet steak and I honestly thought it was out of this world,
If you want a premium quality cheese for a developed taste, Castello Marquis is it. Bit pungent, salty, creamy, and very delicious. Easy to spread and too easy to eat.

This is a lovely smooth and creamy cheese with the texture not unlike Brie, but the flavour is next level. It is lovely on crackers, but thought we’d try some on a chicken and bacon pizza. YUM. It was spectacular. Totally recommend.

Love the pleasant amount of spice and tang. Goes well with fruit and nut crackers.

I’m a big fan of the Castello Blue Cheese, this is just as good. No need for anything fancy, just had it on crackers.
