A milky and buttery taste with notes of tropical fruit and green peppers which is derived from the natural, red smear on the rind and the albino blue mould inside. As Marquis matures, the taste and flavour of the read smear become slightly sharper, while the cheese itself gets more character. Castello Marquis is a truly special cheese. Its taste and flavour are intense and piquant. Thanks to the unique production method, the mould culture develops from the inside of the cheese, whereas the red smear does so from the outside. Its consistency is creamy.

Surprisingly good flavour. I am not a fan of any blue mould cheese but this cheese is surprisingly delicately flavoured. This cheese has just a hint of blue mould that enhances the flavour without overpowering.

A real statement cheese! While it had a strong scent that may not suit everyone, it is beautiful and creamy. There was a lot of conversation of this cheese at our dinner party, and some big fans. Would buy again, perfect for entertaining.
