A milky and buttery taste with notes of tropical fruit and green peppers which is derived from the natural, red smear on the rind and the albino blue mould inside. As Marquis matures, the taste and flavour of the read smear become slightly sharper, while the cheese itself gets more character. Castello Marquis is a truly special cheese. Its taste and flavour are intense and piquant. Thanks to the unique production method, the mould culture develops from the inside of the cheese, whereas the red smear does so from the outside. Its consistency is creamy.

I am a massive fan of Castello, I love it but oh man I never thought any cheese would beat any of the current cheeses. It genuinely melts in the mouth, for a South African I recommend you have some with Biltong, it is the best thing on the planet ever! I love it! If I could I would give Castello Marquis 100 stars, have decided I have to have two in the fridge at all times. xoxoxoxo

I am already a huge fan of Castello Blue, Whilte and Truffle and now I have a new cheese to add to the list of faves. Really enjoyed the slightly different flavours in this cheese yet it’s mellow enough to eat heaps.
Quite a unique flavor. I enjoyed it but was not enough. It’s a new addition to my cheese platter.

It has quite a strong flavor for a soft white cheese however it isn’t too overpowering. It would go well with a fruit accompaniment like fig jelly. In terms of the Castello range, I would likely choose the creamy blue over the Marquis.
