A milky and buttery taste with notes of tropical fruit and green peppers which is derived from the natural, red smear on the rind and the albino blue mould inside. As Marquis matures, the taste and flavour of the read smear become slightly sharper, while the cheese itself gets more character. Castello Marquis is a truly special cheese. Its taste and flavour are intense and piquant. Thanks to the unique production method, the mould culture develops from the inside of the cheese, whereas the red smear does so from the outside. Its consistency is creamy.
Husband and guests loved this so have given it a good score. Too strong for my taste

A really interesting cheese variety that I’d never tried before: Made me think of a more flavourful Brie or Camembert. Will go really well on a cheeseboard.

Smell blew me away – but was flash and tasted great
Absolutely 💯 divine. The smell put a few people off but won them back with the taste. Once again Castello for the win

Loved it when toasting as a topping but did not like it by itself as it had too bold flavour

Excellent texture and flavour, perfect for cheese lovers. Goes well with crackers, by itself, and is an excellent addition to platters. If you’re not a cheese fan, the flavour may be slightly too powerful for you.

All Castello cheeses are unique. I adore Castello Brie
but the marquis, although strong, was full of interesting* full bodied flavours
