A milky and buttery taste with notes of tropical fruit and green peppers which is derived from the natural, red smear on the rind and the albino blue mould inside. As Marquis matures, the taste and flavour of the read smear become slightly sharper, while the cheese itself gets more character. Castello Marquis is a truly special cheese. Its taste and flavour are intense and piquant. Thanks to the unique production method, the mould culture develops from the inside of the cheese, whereas the red smear does so from the outside. Its consistency is creamy.

I have brought this cheese once before as a treat and absolutely loved it, I like to impress my friends with making cheese boards as we drink wine and watch Rugby. Or just catch up. PS great game last weekend. Go the ABs. X

A creamy cheese is my go-to and this cheese is head and shoulders above the other cheeses that I purchased in the past. Why? One might ask. The milky taste of the cheese itself, along with accents of peppers and butter, makes it a unique experience. I like slathering on a good measure on my cracker or celery stick. Great for a cheese board, especially for guests who have a zesty palette and appreciate peppers with a hint of fruit. A cornucopia of tropical goodness!
