A moist, dark brown sugar with a rich, full flavour derived from natural molasses syrup, similar to dark muscovado sugar. It is ideal for sweetening fruits, puddings, fruitcakes, gingerbread and chocolate cakes adding both colour and flavour. Great in BBQ sauces, marinades, pickles, chutneys, chilli or curry.
The deep molasses notes make it the perfect compliment to chocolate cake, fruitcakes, gingerbread and puddings. Delicious sprinkled and caramelised over fresh cut fruit.
But it’s not all about baking. Chelsea Dark Cane Sugar is also a great substitute for palm sugar in Asian dishes.
Experiment a little and substitute it for soft brown sugar to add more flavour to your baking.
Really liked this for the rich caramel flavour, used it in banana bread and Anzac cookies and it worked well in both. Would definitely buy again.

I didn’t see it before at my supermarket and it’s so nice having a darker sugar and different choice to og brown sugar. It’s nice and rich though is a little clumpy so def need to use a spoon or scoop for measuring.

Has a nice rich flavour to it other sugars don’t have. However it is kinda sticky and very lumpy which makes measuring by volume difficult, I had to kinda pack down the sugar when measuring which probably ended up being more than the recipe intended – making the banana cake too rich for my liking. I would have preferred if the included recipe book had measurements of the dark cane sugar in grams. As an ingredient it is probably too niche for me, other than the small booklet included I couldn’t really find any other recipes that use it. The booklet said rather unhelpfully “Use in X,Y,Z” but really needs a conversion added as a guide because I feel at 1:1 it would be too rich (e.g substitute brown sugar for dark cane sugar at a ration of 2/3).
