Predominantly made from sauvignon blanc grown in the matapiro vineyard and tank fermented to retain the pure aromatics of this appellation, while a small portion of the blend comes from our warmer redstone and omarunui vineyards. These sites contribute to a richer, softer mouth-feel of the wine and give it a drinkability that is the key to the hawke’s bay sauvignon blanc style. This sauvignon blanc is fresh, fragrant and zesty. It is excellent as an aperitif, or match with lighter dishes such as salads and seafood. For a fast, simple and satisfying match, try steaming open mussels or clams with a splash of the wine and some of your favourite fragrant herbs. Serve with buttered fresh crusty bread and perhaps a salad of basil leaf, sliced ripe tomato and buffalo mozzarella dressed with good olive oil, salt and pepper. This wine is at its peak when the wine is young and the aromatics are at their freshest.
