Buttercup squash has dark, rich green, hard skin with speckles and stripes. The flesh is orange to dark
yellow with a slightly sweet flavour.
Pumpkin and squash are interchangeable and can be used in similar recipes.
Traditionally squash has been roasted, however it can be used in soups, flans, pies, muffins, or stuffed. They make a delicious side vegetable and their flavour is enhanced by nutmeg. Cooked and cooled pumpkin is also good in a salad.
Squash is a good source of vitamin a which helps support the immune system, and also a source of vitamin c and dietary fibre.
