The central otago pinot noir is a deep red, exhibiting lifted dark cherry and plum characters on the nose, complexed with savoury and chocolate characters, a hint of violet and subtle wild thyme notes. Plum and dark cherries flavour comes through on the palate which is dark and rich with supple tannins, hints of pepper spice and subtle oak influence. The richness and complexity of this pinot noir make it well suited to a variety of meat or game dishes, particularly where savoury flavours abound. This wine is drinking well now, it will develop more complexity if carefully cellared for up to three or four years.
