Cosy Crockpot Chicken and Dumplings

Ingredients
For the casserole:
- 2 chicken breasts – 800 g, cut into bite sized pieces
- 1 stick celery, finely diced
- 2 carrots, diced
- 1 onion, chopped
- 3 cloves garlic
- half cauliflower, roughly chopped
- 1 tsp fresh thyme
- 1 handful chopped parsley
- 1/2 c peas
- 1/2 c corn
- 2 c boiling water
- 1 packet McCormick’s chicken and leek
- 1 cup cooking cream
For the dumplings (makes 14):
- 1 1/2 c flour
- 3 tsp of baking powder
- 3/4 tsp salt
- 1/4 tsp mustard powder (optional)
- 1 1/2 tbsp butter/margarine (25 g)
- 1 tbsp chopped parsley
- 3/4 cup of milk
Method
Preparing the soup:
Heat a frying pan with some oil, and fry the onion and garlic for a couple of mins.
Add celery and carrots, and cook for a couple of minutes. Once slightly tender, empty into a crockpot/slow cooker.
Reheat the frying pan with some more oil, and brown half the chicken – season with salt and pepper.
Add this to crockpot, then brown the other half of the chicken and add to pot too.
Stir in thyme, parsley, peas and corn.
Mix the packet of chicken/leek in 1/4 cup of the water. Add this with the rest of the water into the crockpot and combine.
Cook covered on low for about 7 hours.
Add in the cooking cream and stir. Cover and turn up the heat to high.
While the base is cooking, make your dumplings (see below).
Arrange golf-ball-sized dumplings on top, replace the lid and continue cooking for about 40 mins until dumplings are cooked.
Preparing the dumplings:
Put flour, baking powder and salt (and mustard powder if using) into a food processor. Pulse to combine.
Add butter and pulse until mixture looks like crumbs.
Add parsley, and with the food processor going slowly, pour in milk and process until dough just comes together in a ball.
Pinch off golf ball sized pieces and place on top of casserole for 40 mins towards end of cooking.
All these recipes sound divine but I think these very best is the pizza base who would have thought you could make it with just flour and yogurt brilliant
