Cut out the top of the strawberries (this will serve as the Santa hat). Scoop out the pulp inside the strawberry tops to fit over the filling, doing the same with most of the insides of the strawberries.

In a bowl, combine cream cheese, powdered sugar and vanilla and mix until creamy. Transfer the mixture to a piping bag or Ziploc bag with the corner snipped off. Fill the hollowed out strawberries with the mixture.

Once you’ve filled the strawberries with the cheesecake mixture, top with the Santa hats and decorate with the chocolate sprinkles.

Serve immediately or refrigerate for 30 minutes before serving.
