Place feta, cream cheese, sour cream and zest in a food processor. Whizz until smooth.

Heat up oil and butter in a frying pan, add garlic and fry for a minute. Add mushrooms and cook until golden finish off with a sprinkling of fresh thyme leaves.

Split and toast the English muffins.

Spread each half with whipped feta, then top with mushrooms and cherry tomatoes.

Drizzle with Balsamic vinegar syrup.
