Lemon and Feta Roasted Chicken Bake

This easy, Moroccan-inspired chicken bake is the perfect dinner solution. Simply pop in the oven for a couple of minutes, while you work on your sides and dinner is done!

Ingredients

  • 1kg bone-in chicken thighs (about 6 pieces)
  • 2 tablespoons fresh oregano, chopped
  • 2 cloves garlic, finely minced
  • 2 tablespoon olive oil
  • 4 pieces of zucchini, cut into bite-sized chunks
  • 250g punnet cherry tomatoes
  • ½ preserved lemon, skin-only, cut into thick slices
  • 100g feta cheese

Cooking Method

Preheat oven to 220°C.

Pat dry chicken thighs and place on a lined baking tray.

In a large bowl, mix together oregano, garlic and oil. Spread this mixture over the chicken and sprinkle with salt. Bake in the oven for 20 minutes.

Add zucchini, tomatoes, and preserved lemon to the bowl and toss to mix.

After 20 minutes, add vegetables to the oven tray, crumble over the feta cheese and bake for an additional 20 minutes.
