Salted Caramel Peanut Butter Granola

Ingredients
- 2 Tbsp Chantal Organics Salted Caramel Peanut butter
- 1 Tbsp coconut oil
- ½ cup cashew nuts (or any nuts you have or prefer)
- 1⁄4 cup pumpkin seeds
- 1⁄4 cup sunflower seeds
- 2 cups rolled oats
- ½ cup shredded or flaked coconut
Method
Preheat oven to 150°C.
In a bowl, add the peanut butter and coconut oil. Heat in the microwave for 20 seconds or until the mixture is runny.
Mix until smooth. If not, give it another 10 seconds in the microwave.
Add in your nuts and seeds and stir well.
Add the oats and stir until the mixture is evenly combined.
Tip the bowl on to a lined baking tray, making sure the mixture is evenly spread out across the whole tray.
Bake for approximately 15 minutes until lightly golden.
You will need to check and give it a stir around every 5 minutes to make sure it is cooked evenly and doesn’t burn.
In the final 5 minutes in the oven, sprinkle the coconut over the top to cook.
Remove from the oven and leave to cool on the tray.
Serve in a bowl with yoghurt or milk and top with your choice of fruits. For storage, place in an air-tight container.
Cook’s Notes:
The amounts of nuts and seeds can be more or less depending on what you prefer, you can also add things like dried fruits, chocolate chips and more.
