Ingredients
- 4 tablespoons of butter
- 1 cup of diced onion
- 1 teaspoon of garlic powder
- 4 tablespoons of flour
- 2 cups of vegetable stock
- 1 teaspoon of salt
- dash of pepper
- 1 cup of carrots
- 3 cups of broccoli
- 2 cups of half-and-half or heavy cream
- 2 cups of cheddar cheese
Method
First, start with melting 4 tablespoons of butter in a medium pot
Add in one cup of diced onion and fry until fragrant. Add one teaspoon of garlic powder and cook for a further minute.
Whisk in 4 tablespoons of flour and cook for a few minutes or until golden brown.
Reduce heat and slowly add 2 cups of vegetable stock. Once it looks soup-like, add a teaspoon of salt and dashes of pepper.
Add the carrots and broccoli and simmer for about 15 minutes or until vegetables are done to your liking.
Mix in 2 cups of half-and-half or heavy cream and lastly 2 cups of cheddar cheese. Taste test and add in extra salt and/or pepper, if desired.
