Prep Time15 minCook Time8 minTotal Time23 minYieldServes 2CourseMain Course IngredientsSan Remo Pulse Pasta Spirals Chickpea1 punnet heirloom cherry tomatoes, quartered3 cups flat leaf parsley, finely chopped½ cup mint, finely chopped1 small red onion, finely chopped2 stalks celery, diced1 Lebanese cucumber, diced2 lemons, juiced4 tbsp olive oilSalt and pepper Method1Into a pot of boiling salted water, add the pasta and cook as per packet directions.2Once cooked, strain and refresh pasta under cold water.3In a large bowl, mix together tomatoes, parsley, mint, onion, celery, cucumber and pasta.
