This cheese had a very intense onion flavour which I loved but the children didn’t. the texture of the cheese was true to a cheddar texture – firm and slightly crumbly as it aged. Do have to be careful storing it in the fridge so the flavour doesn’t taint other foods. the price of Castello cheeses does put it out of our family budget unless on special or buying for a special occasion.

As a feature cheese in a cheese board this was amazing! I also used it very sparingly in dishes ( lightly sprinkled over scrambled eggs was amazing) due to the strong flavour you need to be careful in how you use it as it’s not as versatile as standard cheddar but it was so good
